Chocolate Cake in a Cup

... or rather for a single serving... in a ramekin


I saw the recipe... the 5 Minute Cake (from start to finish) done in the microwave... cross referenced with similar recipes... end result... yuck. The recipes I found (I tried 3) all delivered a bland and gummy cake. Definitely not worth the calories - no matter how "quick" it is.


Now pictured below is my version of the Cake in a Cup. I scaled down my vegan chocolate cake batter to 1/12, simply stirring together in the ramekin and microwaving for ONE MINUTE! I drizzled a vanilla glaze and sprinkled toffee bits on top. These were actually quite good.
